Job Summary

Cuts, trims, and prepares portions of meat for use or sale in retail

establishments.

General Accountabilities

• Wraps, weighs, labels and prices cuts of meat.

• Prepares and places meat cuts and products in display counter to attract shoppers.

• Prepares special cuts of meat ordered by customers.

• Cuts, trims, bones, ties, and grinds meats, such as beef, lamb, goat, poultry, and fish, to prepare meat in cooking form.

• Receives, inspects, and stores meat upon delivery, to ensure meat quality.

• Shapes, laces, and ties roasts, using boning knife, skewer, and twine.

• Estimates requirements and orders or requisitions meat supplies to maintain inventory.

• May supervise other butchers or meat cutters.

• Records quantity of meat received and issued to cooks or keeps records of meat sales.

Job Qualifications

Education: High school diploma or equivalent.

Experience: At least 3 years of related experience.

Food safety certification an asset

POSITION PURPOSE

The Fish Monger/Sales is responsible for the operations of the seafood department, to maintain freshness and customer appeal using excellent merchandising skills. Working the department to ensure an unprecedented shopping experience for the customer; to promote sales; quality, freshness, and customer service.

POSITION RESPONSIBILITIES

This will involve:

• Providing outstanding customer service to customers and ensuring, at all times, that the company is positively promoted.

• Stock Control: responsible for ordering, presentation, merchandising and promotions.

• Must have experience in the use of specialized equipment (professional cutlery, scaler and associated personal protective equipment etc.) and ensure equipment operates correctly (reporting immediately any malfunctions).

• Maintaining a hygienically clean and safe working environment

RESPONSIBILITIES

The typical tasks performed by fishmongers include:

• Taking deliveries of fresh fish and placing orders

• Reviewing stock on a regular basis

• Finding reliable sources for fish and seafood

• De-scaling the fish and removing bones

• Gutting and cleaning the fish

• Cutting the fish into smaller pieces

• Arranging displays of fish in the counters

• Ensuring that the fish is stored properly at all times

• Advising customers as to which products to purchase

• Advising customers how to store and cook fish properly

• Cleaning tools used on a regular basis

• Advertising in the local area

General Accountabilities

• Greets customers.

• Receives payment by cash, check, credit cards, vouchers, or automatic debits.

• Issues receipts, refunds, credits, or change to customers.

• Counts money in cash drawers at the beginning of shifts to ensure that amounts are correct and that there is adequate change.

• Calculates total payments received during a time period, and reconciles this with total sales.

• Assist customers by providing information and resolving their complaints.

• Maintains clean and orderly checkout area.
